Chicken Caesar Salad (Grilled)
Ingredients:
- 2 boneless, skinless chicken breast halves
- 2 T. avocado oil
- ½ t. each dried basil, oregano, garlic powder, salt
- 1 t. each pepper, paprika
- 6 c. torn romaine lettuce
- 1-2 tomatoes, sliced (optional)
- Caesar salad dressing
- Caesar salad croutons
- Parmesan cheese
Directions:
- Cut each chicken breast in 2-3 pieces and pound to flatten.
- Put chicken in a large container.
- In small bowl, mix oil and spices. Thoroughly cover chicken with spice/oil mixture (may marinate for 30 minutes or longer or not at all).
- Preheat grill on High for 5 minutes.
- Turn grill down to Medium and grill chicken for 6-7 minutes.
- Turn; grill for another 6-7 minutes.
- Arrange romaine and tomatoes on plates.
- Cut chicken into strips; place on top.
- Drizzle with dressing and top with croutons and Parmesan cheese.
