Chicken Caesar Salad (Grilled)

 

Ingredients:

  • 2 boneless, skinless chicken breast halves
  • 2 T. avocado oil
  • ½ t. each dried basil, oregano, garlic powder, salt
  • 1 t. each pepper, paprika
  • 6 c. torn romaine lettuce
  • 1-2 tomatoes, sliced (optional)
  • Caesar salad dressing
  • Caesar salad croutons
  • Parmesan cheese

Directions:

  1. Cut each chicken breast in 2-3 pieces and pound to flatten.
  2. Put chicken in a large container.
  3. In small bowl, mix oil and spices. Thoroughly cover chicken with spice/oil mixture (may marinate for 30 minutes or longer or not at all).
  4. Preheat grill on High for 5 minutes.
  5. Turn grill down to Medium and grill chicken for 6-7 minutes.
  6. Turn; grill for another 6-7 minutes.
  7. Arrange romaine and tomatoes on plates.
  8. Cut chicken into strips; place on top.
  9. Drizzle with dressing and top with croutons and Parmesan cheese.
