Directions:
- Put yeast in bowl, then add water. Do not stir and let sit until bubbly.
- Add sugar, salt and oil. Mix.
- Turn on mixer and add flour. Mix until dough is smooth and elastic.
- Cover and let rise 1 hour in a warm, draft-free area until doubled (or more).
- Punch down dough and divide into two balls.
- On oiled surface, roll out each ball into a 1" thick rectangle. Roll up on long side.
- Place both loaves on a lightly greased cookie sheet and cut 4 slits on top of each loaf.
- Let rise for approximately 15-20 minutes, then bake at 375° for 25 minutes.
- When done, cover with butter and let sit for 15 minutes. Serve with jam.
Servings: Makes 2 large loaves.
