Potato Cheese Soup (Crock Pot)



  • 2 very large or 4 medium potatoes, peeled and diced
  • 1 can chicken broth
  • 1 celery stalk, finely chopped (opt.)
  • 1 T. butter
  • 1 1/2 c. milk
  • Sharp cheddar cheese, shredded


  1. Combine first four ingredients in a crock pot. Cook on High for 3-4 hours until potatoes are tender.
  2. Mash the potato mixture.
  3. Add milk and shredded cheese just before serving.

Note: This may also be made on top of the stove. Cook the first four ingredients until potatoes are tender (about 20-30 minutes). Mash. Add cheese and milk.

Servings: Serves 3-4.
