Cream of Zucchini Soup

 

Ingredients:

  • 2 T. butter
  • 1/4 c. dehydrated onions
  • 3 3/4 c. zucchini, sliced
  • 3 c. chicken broth
  • 1/8 t. nutmeg
  • 1/8 t. pepper
  • 1/2 c. milk OR 1/4 - 1/2 c. heavy cream
  • 2 c. sharp cheddar cheese, grated
  • 1 can chicken breast, with broth OR 1 1/2 c. cooked, diced chicken
  • 1 can green chile or 4 oz. frozen green chile

Directions:

  1. In large pot, melt butter on medium heat.
  2. Add onions and zucchini; coat with melted butter.
  3. Add chicken broth; cover pot and simmer until zucchini is cooked (about 30 minutes).
  4. Pour contents of pot into a blender; add nutmeg and pepper and blend.
  5. Pour contents of blender back into pot; add milk or cream, cheese, chicken and green chile.
  6. Stir constantly until cheese is melted. DO NOT BOIL.
  7. May serve immediately or may refrigerate and reheat the next day.
