Ingredients:
- 2 T. butter
- 1/4 c. dehydrated onions
- 3 3/4 c. zucchini, sliced
- 3 c. chicken broth
- 1/8 t. nutmeg
- 1/8 t. pepper
- 1/2 c. milk OR 1/4 - 1/2 c. heavy cream
- 2 c. sharp cheddar cheese, grated
- 1 can chicken breast, with broth OR 1 1/2 c. cooked, diced chicken
- 1 can green chile or 4 oz. frozen green chile
Directions:
- In large pot, melt butter on medium heat.
- Add onions and zucchini; coat with melted butter.
- Add chicken broth; cover pot and simmer until zucchini is cooked (about 30 minutes).
- Pour contents of pot into a blender; add nutmeg and pepper and blend.
- Pour contents of blender back into pot; add milk or cream, cheese, chicken and green chile.
- Stir constantly until cheese is melted. DO NOT BOIL.
- May serve immediately or may refrigerate and reheat the next day.
