Cream of Broccoli Soup

 

Ingredients:

  • 2 T. butter
  • 1/4 c. dehydrated onions
  • 3 3/4 c. broccoli, chopped
  • 3 c. chicken broth
  • 1/8 t. nutmeg
  • 1/8 t. pepper
  • 1/2 c. milk OR 1/4 -1/2 c. cream
  • 2 c. sharp cheddar cheese, grated
  • 1 can chicken breast, with broth OR 1 1/2 c. cooked diced chicken

Directions:

  1. In large pot, melt butter on medium heat.
  2. Add onions and broccoli; coat with melted butter.
  3. Add chicken broth; cover pot and simmer until broccoli is cooked (about 30 minutes).
  4. Pour contents of pot into a blender; add nutmeg and pepper and blend.
  5. Pour contents of blender back into pot; add milk or cream, cheese and chicken.
  6. Stir constantly until cheese is melted. DO NOT BOIL.
  7. May serve immediately or may refrigerate and reheat the next day.

Servings: Serves 6.
