Chile Colorado (Crock Pot)

This recipe has been adapted from Grandma H's Chile Colorado recipe
 

Ingredients:

  • 2 lbs. roast, cut into bite-sized pieces
  • 2 T. olive oil
  • 1 1/3 c. water
  • 5 dried California (red) chiles
  • 2 garlic cloves
  • 1/2 t. salt
  • 1 onion, chopped
  • 1 T. oil
  • 1 T. flour
  • 1 t. oregano
  • 1/4 t. cumin

Directions:

  1. Brown meat in oil; place in crock pot.
  2. Add water and red chilis to meat.
  3. Sauté garlic, salt and onion in oil; place in crock pot.
  4. Add flour, oregano and cumin to crock pot.
  5. Cook for 4-6 hours on High.
  6. Serve with flour tortillas.

Servings: Serves 8-10.
