Cowboy Cookies (Einkorn & Coconut Oil)

Adapted from the Einkorn Cookbook
 

Ingredients:

  • ¼ c. unsalted butter, softened
  • ¼ c. coconut oil, softened
  • 1 c. Sucanat or maple sugar
  • 1 egg
  • 1 t. vanilla
  • 105 g. all-purpose einkorn flour
  • ½ t. baking soda
  • 1 t. baking powder
  • ¼ t. salt
  • 1 c. rolled oats
  • 75 g. dark chocolate chips
  • (opt.) ¼ to ½ c. unsweetened coconut

Directions:

  1. In large bowl or mixer, cream butter, oil, and sugar.
  2. Add vanilla and egg; mix well.
  3. Add flour, baking soda, baking powder, and salt all at once; mix well.
  4. Add oats, chocolate chips, and coconut one at a time, mixing well between each addition.
  5. Drop by tablespoonfuls or cookie scoop onto ungreased cookie sheet.
  6. Bake in pre-heated 325° oven for 12-15 minutes.

Servings: Makes 2 dozen
