Cream of Chicken Soup

Adapted from


  • 2 T. butter or chicken fat
  • 3 T. flour (Einkorn or wheat)
  • ½ c. chicken broth
  • ½ c. milk
  • ¼ t. salt
  • Pepper to taste
  • Granulated onion to taste


  1. In small pan, melt butter over medium-low heat.
  2. Whisk in flour and let cook for 1-2 minutes.
  3. Slowly stir in chicken broth and milk.
  4. Whisk until it begins to thicken.
  5. Let simmer for a few minutes.
  6. Season with salt, pepper, and granulated onion.

Servings: 1 cup
