Butternut Squash Sausage Bake



  • 1 medium butternut squash, peeled and cut into 3/4” cubes
  • 2. T. ghee or oil
  • 1 lb. sausage
  • 1 bell pepper, cut into 1” pieces
  • 1 can pineapple chunks, drained
  • 1 T. maple syrup   


  1. Preheat oven to 425º.
  2. Place squash cubes on parchment paper lined cookie sheet.
  3. Melt ghee and pour over squash. Stir to coat.
  4. Bake for 40 minutes.
  5. Meanwhile, cook sausage and drain fat.
  6. Add bell pepper and cook until slightly tender.
  7. Add pineapple chunks and heat through.
  8. Stir sausage mixture into cooked butternut squash.
  9. Drizzle with maple syrup; toss to coat.
