Italian Cannellini Bean Soup

 

Ingredients:

  • 1 lb. Italian sausage
  • 2 T. olive oil
  • ½-1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 c. beef broth
  • 1-2 red bell peppers, chopped
  • 1 15 oz. can diced tomatoes, with juice
  • 1 8 oz. can tomato sauce
  • 1 t. dried oregano
  • 1 t. dried thyme
  • 2-3 medium zucchini or crookneck, sliced
  • 1 15 oz. can cannellini beans

Directions:

  1. Brown sausage and drain.
  2. Add olive oil to sausage and sauté onions and garlic.
  3. Add broth, bell peppers, tomatoes, tomato sauce and seasonings.
  4. Bring to a boil; reduce to a simmer.
  5. Add zucchini and cannellini beans and simmer covered for another 25 minutes or until zucchini is done.

Servings: 6-8
