Chow Mein (Pork)

Adapted from Carolyn's Chow Mein recipe
 

Ingredients:

  • 2 lbs. end cut bone-in pork chops, thinly sliced
  • 1 - 1 ½ onions, sliced
  • 1 bell pepper, sliced
  • 2 - 3 baby bok choy, sliced (white and green leafy parts separated)
  • Oil
  • 8 oz. brown rice capellini noodles, cooked, drained and cooled

Sauce

  • ¼ c. Tamari sauce, soy sauce or liquid aminos
  • 1 c. water
  • ½ t. sugar or maple syrup
  • 2 T. oil
  • 1 T. + 1 t. cornstarch or arrowroot
  • 2 t. ground ginger or ½ - 1” fresh ginger
  • 4 cloves garlic, minced

Directions:

  1. Brown pork in small amount of oil; remove from pan and set aside.
  2. (At same time) In separate pan, sauté onions, peppers and white parts of bok choy in small amount of oil. Add leafy parts of bok choy for last 5 minutes of cooking.
  3. Make sauce in small bowl.
  4. In pan used to cook the pork, fry cooked noodles in a small amount of oil.
  5. Add meat, sauce, and vegetables and heat through.
