Cheese Sauce

Adapted from the Nourishing Traditions Cookbook for Children
This sauce takes only about 5 minutes, so it should be made just before serving so it doesn't separate.


  • ¼ c. butter
  • ¼ c. cream
  • 2 c. sharp cheddar cheese, grated
  • 2 egg yolks
  • (opt.) ¼ t. salt if using unsalted butter


  1. Put cream and butter in pot on medium low heat and stir constantly until the butter melts.
  2. Add the grated cheese and stir until mixture is smooth.
  3. Mix in the egg yolks (and opt. salt).

Servings: Enough for 6 oz pasta for macaroni and cheese
