Chicken and Spinach Calzones

 

Ingredients:

  • 1 T. yeast
  • 1 T. sugar
  • 1 t. salt
  • 1 c. warm water
  • 1/4 c. olive oil
  • 2 1/2 c. white flour
  • 3/4 c. whole wheat flour

Filling

  • 10 oz. frozen spinach
  • 3 green onions, diced
  • 1/2 c. ricotta cheese
  • 1 c. mozzarella cheese, shredded
  • 1 chicken breast, marinated in 1/3 c. Italian dressing for 2 hours, then grilled and cut into bite-sized pieces

Sauce:

  • 8 oz. can tomato sauce
  • 1 T. olive oil
  • 1/2 t. basil, oregano, marjoram, thyme
  • 1/4 t. garlic powder
  • 1/4 t. pepper

Directions:

  1. Add yeast, sugar, salt and water into large mixing bowl; let yeast bubble.
  2. Add oil; turn on blender and add flours, 1/2 c. at a time.
  3. Divide dough into 6 pieces.
  4. Combine filling ingredients in separate bowl and combine sauce ingredients in separate bowl.
  5. Roll out each piece of dough into a 7" circle.
  6. Spread filling mixture in a 6" circle.
  7. Fold circle in half and seal the edges well; set on greased cookie sheet.
  8. Bake in preheated 450° oven for 15 minutes or until golden brown.
  9. Heat extra sauce to serve with calzones.

Servings: Makes 6 large calzones.
