White Chili with a Kick

Ingredients:

  • ½ onion, finely diced
  • 3 T. butter, cubed
  • 1 T. flour
  • 1 c. chicken broth
  • ½ c. cream or half and half
  • 2 c. cubed chicken
  • 1 can cannellini beans, rinsed and drained
  • 1 c. frozen corn
  • ½ c. chopped med. green chile
  • 2 t. cumin
  • 1 t. chile powder
  • ½ t. salt (or to taste)
  • ½ t. pepper
  • 1 ½ c. shredded Monterrey Jack or cheddar cheese

Directions:

  1. In Dutch oven or large pot, sauté onion in butter.
  2. Stir in flour until blended; cook and stir for 3 minutes or until golden brown.
  3. Gradually add broth and cream or half and half.
  4. Bring to a boil; cook and stir for 2 minutes or until thickened.
  5. Add the chicken, beans, corn, chiles, and spices; heat through.
  6. Stir in cheese until melted.
