Chicken Mandarin Orange Salad (Grilled)
Ingredients:
- 2 boneless, skinless chicken breast halves, pounded thin
- 2 T. avocado oil
- ½ t. each dried basil, oregano, garlic powder, salt
- 1 t. each pepper, paprika
- 6 c. torn romaine lettuce
- 1-2 cans Mandarin oranges
- Cucumber, sliced
- Olives, black or Kalamata
- Red onion, chopped
- 2-3 avocados, cubed or sliced
- Feta cheese
- Italian salad dressing
Directions:
- 1. Cut each chicken breast in 2-3 pieces and pound to flatten.
- Put chicken in a large container.
- In small bowl, mix oil and spices. Thoroughly cover chicken with spice/oil mixture (may marinate for 30 minutes or longer or not at all).
- Preheat grill on High for 5 minutes.
- Turn grill down to Medium and grill chicken for 6-7 minutes.
- Turn; grill for another 6-7 minutes.
- Cut chicken into strips; serve with other ingredients.
