Ingredients:
- ¼ c. olive oil or chicken fat
- ½ c. onion, chopped
- 2 cloves garlic, minced
- 2 c. medium green chile
- ½ t. salt
- 2 c. chicken broth
- 2 t. olive oil + 2 t. flour
Directions:
- Sauté onion in oil or fat for about 15 minutes or until soft.
- Add garlic, green chiles, salt, chicken broth and water.
- Blend.
- Make a roux by combining 2 t. olive oil and 2 t. flour in small bowl.
Servings: makes 4-5 cups
