Ingredients:

  • ¼ c. olive oil or chicken fat
  • ½ c. onion, chopped
  • 2 cloves garlic, minced
  • 2 c. medium green chile
  • ½ t. salt
  • 2 c. chicken broth
  • 2 t. olive oil + 2 t. flour

Directions:

  1. Sauté onion in oil or fat for about 15 minutes or until soft.
  2. Add garlic, green chiles, salt, chicken broth and water.
  3. Blend.
  4. Make a roux by combining 2 t. olive oil and 2 t. flour in small bowl.

Servings: makes 4-5 cups
