Ingredients:

  • 1/3 c. oil or unsalted butter, melted
  • 2 eggs
  • 1/2 c. milk
  • 1 t. vanilla
  • 1 c. flour
  • 1 c. whole wheat flour
  • 2 t. baking powder
  • 1/4 t. salt
  • 3/4 c. sugar
  • 2 c. fresh or frozen blueberries (thawed if frozen)

Directions:

  1. In large bowl, add all ingredients (except blueberries) in order given; beat until just moistened.
  2. Gently fold in berries with a spatula.
  3. Fill greased or lined muffin cups 2/3 full.
  4. Bake in preheated 350° oven for 18-22 minutes.

Servings: Makes 18 muffins.
