Berry Cream Muffins

Ingredients:
2 eggs
1 c. sour cream
1/2 c. oil
1/2 t. vanilla
2 c. whole wheat flour
3/4 c. sugar
1/2 t. baking powder
1/2 t. baking soda
Dash of salt
1 1/2 c. fresh or frozen raspberries
1/4 c. macadamia nuts, chopped (optional)
Directions:
Combine egg, sour cream, oil and vanilla; mix well.
Add flour, sugar, baking powder, baking soda and salt; stir until just moistened.
Add berries (and nuts) and stir gently.
Fill greased or lined muffin cups 2/3 full.
Bake in preheated 350° oven for 18-22 minutes.
Servings:
Makes 18 muffins.
