Berry Cream Muffins

This recipe has been adapted from Taste of Home cookbook
 

Ingredients:

  • 2 eggs
  • 1 c. sour cream
  • 1/2 c. oil
  • 1/2 t. vanilla
  • 2 c. whole wheat flour
  • 3/4 c. sugar
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • Dash of salt
  • 1 1/2 c. fresh or frozen raspberries
  • 1/4 c. macadamia nuts, chopped (optional)

Directions:

  1. Combine egg, sour cream, oil and vanilla; mix well.
  2. Add flour, sugar, baking powder, baking soda and salt; stir until just moistened.
  3. Add berries (and nuts) and stir gently.
  4. Fill greased or lined muffin cups 2/3 full.
  5. Bake in preheated 350° oven for 18-22 minutes.

Servings: Makes 18 muffins.
