Lemon Poppyseed Muffins

Ingredients:

  • 3 cups flour
  • 2 1/4 cup sugar
  • 1 1/2 tbsp. poppyseed
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 eggs
  • 1 1/2 cups milk
  • 1 cup vegetable oil
  • 1 tbsp. lemon extract
  • Glaze
  • 1 cup powdered sugar
  • 2 tbsp. lemon juice

Directions:

  1. Preheat oven to 350º.
  2. Combine dry ingredients.
  3. Add remaining ingredients, mix only till thoroughly combined.
  4. Fill lined muffin tins 3/4 full and bake until toothpick comes out clean, about 20 minutes. Glaze. 

Servings: 2 1/2 dozen
