Lemon Poppyseed Muffins

Ingredients:
- 3 cups flour
- 2 1/4 cup sugar
- 1 1/2 tbsp. poppyseed
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 eggs
- 1 1/2 cups milk
- 1 cup vegetable oil
- 1 tbsp. lemon extract
- Glaze
- 1 cup powdered sugar
- 2 tbsp. lemon juice
Directions:
- Preheat oven to 350º.
- Combine dry ingredients.
- Add remaining ingredients, mix only till thoroughly combined.
- Fill lined muffin tins 3/4 full and bake until toothpick comes out clean, about 20 minutes. Glaze.
Servings: 2 1/2 dozen
