Salmon Patties and Dill Sauce

 

Ingredients:

  • Salmon Patties
  • 15 oz. can salmon, drained
  • 2 c. loosley packed soft breadcrumbs
  • 1/3 c. finely chopped green onions (white or purple)
  • 1/4 c. milk
  • 2 eggs, slightly beaten
  • 2 tbsp. finely chopped parsley 
  • 2 tbsp. lemon juice
  • 1/4 tsp. salt
  • pinch of pepper
  • 1/4 tsp. dill weed
  • 1/2 c. cracker crumbs or fine dried breadcrumbs
  • 3 tbsp. butter or margarine
  •  
  • Dill Sauce
  • 1/4 c. sour cream
  • 1/4 c. mayo
  • 1/2 tsp. dill weed
  • 1-1 1/2 tsp. lemon
  •

Directions:

  1. Salmon Patties
  2. Separate salmon into fine flakes. In a large bowl combine flaked salmon, soft breadcrumbs, green onions, milk, eggs, parsley, lemon juice, salt and pepper, and dill weed. Shape into 8 inch patties 3/4 inch thick. Dip pattties in cracker crumbs or dry bread crumbs. Melt butter in skillet. Pan fry on both sides till golden brown. Serve with dill sauce.

  5. Combine all ingredients in a small bowl; strir until blended. Makes 1/2 cup.
