Berry Coffee Cake

This recipe has been adapted from the kitchen of Janette Jeppson
 

Ingredients:

Cake:

  • 4 oz (1/2 pkg) cream cheese, softened
  • 1/4 c. butter, softened
  • 1 c. sugar
  • 1 egg
  • 1/4 t. salt
  • 1 t. baking powder
  • 1 t. vanilla
  • 2 c. frozen berries

Topping

  • 2 T. white sugar
  • 1 t. cinnamon

Directions:

  1. Cream together the cream cheese and butter.
  2. Add sugar and egg and beat well.
  3. Add flour, salt and baking powder all together; mix.
  4. Stir in the vanilla.
  5. Fold in the berries.
  6. Pour into greased and floured 9 inch cake pan.
  7. Combine topping ingredients and sprinkle over cake batter.
  8. Bake in preheated 350° oven for 1 hour. Cool on wire rack.

Servings: Makes one 9
