Indian Curry

Ingredients:

  • 1/2 cup finely chopped onion (1 medium)
  • 1/2 cup finely chopped celery
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 teaspoon curry powder
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon Worcestershire sauce
  • 1 1/2 cups chopped cooked chicken
  • 1/2 cup tomato juice
  • 2 cups cooked rice

Directions:

  1. In medium saucepan cook onion and celery in hot butter until tender.
  2. Stir in flour and curry powder.
  3. Add chicken broth and Worcestershire sauce.
  4. Cook and stir until thickened and bubbly.
  5. Stir in cooked chicken and tomato juice; heath through.
  6. If desired, season to taste with salt and pepper.
  7. Serve over hot rice.

Servings: Makes 4 servings.
