White Bean and Tomato Soup



  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 (15-oz.) cans white beans
  • 1 (14.5-oz.) can Italian style diced tomatoes
  • 1 tsp dried oregano


  1. Saute´ garlic in the olive oil over medium heat until fragrant.
  2. Add 1 can white beans and mash coarsely.
  3. Stir in 1 additional can of white beans, the can of tomatoes, and dried oregano. 
  4. Simmer, partially covered, for 10 minutes. Season to taste with salt and pepper. Top with shaved parmesan cheese.
