Oven Chicken Pilaf

Six Ingredients or Less by Carlean Johnson


  • 4 chicken breast halves
  • ssalt and pepper
  • 2 TBSP melted butter
  • 2 cups hot chicken broth
  • 1 cup uncooked long-grain rice
  • 1/2 cup slivered almonds, toasted (optional- I don't use)


  1. Place chicken in greased 9x13 baking dish. Sprinkle with salt and pepper. Brush with the melted butter. Bake at 350* for 30 minutes. Add 1/2 cup water to baking dish and bake 10 mins. Remove from oven. Pour hot broth into baking dish. Add rice to liquid, distributing evenly. Sprinkle almonds over top. Cover tightly with foil and bake 30 minutes. Remove foil and bake about 10 minutes or until liquid is absorbed and chicken is golden. Makes 4 servings.
