Mexican Rice

Ingredients:

  • 2 c. rice
  • Olive oil
  • Onions
  • 2 cloves garlic, minced
  • 1 (10 oz) can Rotel tomatoes
  • 3 c. chicken broth

Directions:

  1. Stir fry rice in olive oil with onions until lightly browned.
  2. Add garlic, tomatoes and chicken broth.
  3. Heat to boiling; cover and turn heat to low.
  4. Cook about 20-30 minutes.

Servings: Makes 6 cups
