Oatmeal Cookies (Lemon Blueberry)

  • 1 c. brown sugar
  • 1c. butter
  • 3/4 c. honey
  • 2 T. lemon juice
  • 2 eggs
  • 3/4 c. whole wheat flour
  • 2 t. baking powder
  • 1 t. baking soda
  • Dash of salt
  • 2 1/2 c. oats
  • 3/4 c. dried blueberries
  • Zest from 1 lemon

Note: For Orange-Cranberry cookies, substitute orange juice and zest for the lemon juice and zest. Substitute cranberries for the blueberries. May also add 1 c. white chocolate chips.


  1. Cream together the brown sugar and butter; add honey, lemon juice and eggs and continue to cream together.
  2. Add flour, baking powder, baking soda, salt and oats and mix well.
  3. Mix in lemon zest and blueberries.
  4. Drop by spoonfuls on baking sheet and bake in pre-heated 350º oven for 10-12 minutes.
