Cobbler (Apricot or Peach)
Ingredients:
Filling
- 1/2 c. sugar (if using unsweetened or fresh fruit)
- 1 t. cinnamon
- 1 T. cornstarch
- 4 c. fresh or canned fruit
- 1 t. lemon juice
Topping
- 1 c. flour
- 2 T. coconut oil (or 3 T. butter)
- 1 1/2 t. baking powder
- 1/2 c. milk
- Dash of salt
- 1 T. sugar
- Vanilla ice cream (opt., but highly recommended!)
Directions:
Filling
- Blend 1/2 c. sugar, cornstarch and cinnamon in a saucepan.
- Stir in fruit and lemon juice.
- Cook on medium heat, stirring constantly until mixture thickens and boils.
- Continue to stir for 1 minute; set aside.
Topping
- Preheat oven to 400º.
- Stir flour, sugar, baking powder and salt in bowl.
- Add coconut oil (or butter) and milk.
- Mix with a fork until dough comes together.
- Pour fruit mixture into an 8 x 8 pan or 2 qt. casserole dish.
- Drop dough onto fruit by spoonfuls.
- Bake 25-30 minutes, or until golden brown.
- Serve warm with a scoop of vanilla ice cream.
