Cobbler (Apricot or Peach)

 

Ingredients:

Filling

  • 1/2 c. sugar (if using unsweetened or fresh fruit)
  • 1 t. cinnamon
  • 1 T. cornstarch
  • 4 c. fresh or canned fruit
  • 1 t. lemon juice

Topping

  • 1 c. flour
  • 2 T. coconut oil (or 3 T. butter)
  • 1 1/2 t. baking powder
  • 1/2 c. milk
  • Dash of salt
  • 1 T. sugar
  • Vanilla ice cream (opt., but highly recommended!)

Directions:

Filling

  1. Blend 1/2 c. sugar, cornstarch and cinnamon in a saucepan.
  2. Stir in fruit and lemon juice.
  3. Cook on medium heat, stirring constantly until mixture thickens and boils.
  4. Continue to stir for 1 minute; set aside.

Topping

  1. Preheat oven to 400º.
  2. Stir flour, sugar, baking powder and salt in bowl.
  3. Add coconut oil (or butter) and milk.
  4. Mix with a fork until dough comes together.
  5. Pour fruit mixture into an 8 x 8 pan or 2 qt. casserole dish.
  6. Drop dough onto fruit by spoonfuls.
  7. Bake 25-30 minutes, or until golden brown.
  8. Serve warm with a scoop of vanilla ice cream.

Servings: 6 servings
