Ingredients:
- Couple slices of onion, finely chopped
- 1 T. olive oil
- 1 T. butter
- 1 can diced tomatoes, with juice
- 1 garlic clove, pressed
- 1/4 t. salt
- 1/8 t. black pepper
- 1/2 t. dried oregano, crushed
- 1 T. fresh basil, minced
- 1 c. chicken broth
- 1/4 c. heavy cream
Directions:
- Sauté the onion in the oil and butter.
- Put onion with all other ingredients (except the chicken broth and heavy cream) in a blender.
- After blending, transfer mixture to a pot and add the chicken broth.
- Simmer for 30 minutes to 1 hour to let the flavors blend. (Could also put it in the crock pot on Low for a couple of hours.)
- Just before serving, stir in the cream.
