  • Couple slices of onion, finely chopped
  • 1 T. olive oil
  • 1 T. butter
  • 1 can diced tomatoes, with juice
  • 1 garlic clove, pressed
  • 1/4 t. salt
  • 1/8 t. black pepper
  • 1/2 t. dried oregano, crushed
  • 1 T. fresh basil, minced
  • 1 c. chicken broth
  • 1/4 c. heavy cream


  1. Sauté the onion in the oil and butter.
  2. Put onion with all other ingredients (except the chicken broth and heavy cream) in a blender.
  3. After blending, transfer mixture to a pot and add the chicken broth.
  4. Simmer for 30 minutes to 1 hour to let the flavors blend. (Could also put it in the crock pot on Low for a couple of hours.)
  5. Just before serving, stir in the cream.
