Oven Roasted Tomatoes



  • 5-6 tomatoes
  • 1 Tbsp minced garlic
  • 1 small onion
  • olive oil
  • salt & pepper


  1. Pre-heat oven to 200°.
  2. Slice tomatoes in half (if small) or quaters (if large) and scoop out the seeds.
  3. Thinly slice the onion.
  4. Spread tomatoes out on a parchment lined baking sheet, and sprinkl the onions are garlic over them.
  5. Drizzle with olive oil and salt & pepper.
  6. Roast them in the oven for 2 hours.

Note: Blend to a paste and spread on french bread.
