Directions:
- Pre-heat oven to 200°.
- Slice tomatoes in half (if small) or quaters (if large) and scoop out the seeds.
- Thinly slice the onion.
- Spread tomatoes out on a parchment lined baking sheet, and sprinkl the onions are garlic over them.
- Drizzle with olive oil and salt & pepper.
- Roast them in the oven for 2 hours.
Note: Blend to a paste and spread on french bread.
