Haymaker's Switchel

  • 1/4 cup mint
  • 1/4 cup lemon balm
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup orange juice
  • 1/4 cup simple sugar syrup (1/3 cup sugar and 2/3 cup sugar brought to a boil)


  1. Make sugar syrup.
  2. Squeeze citrus juices. Chop mint and lemon balm (very fine).
  3. Add orange and lemon juices to the hot sugar syrup and remove from heat.
  4. Add chopped mint and lemon balm and let steep, covered, in the hot hot sugar syrup for 1 hour.
  5. Strain mixture through a fine sieve or cheese cloth.
  6. Combine with 2 quarts of ginger ale.
  7. Serve chilled.
