Jacques Chicken Enchiladas



  • 2 chicken breasts
  • Las Palmas green enchilada sauce
  • 1/4 chopped onion
  • 2 cups Monterey Jack cheese


  1. Cook chicken.
  2. Shred chicken and mix chicken, onion and cheese in a bowl.
  3. Heat enchilada sauce, dip tortillas in sauce, and fill with chicken and cheese mix and then roll.
  4. Put a little sauce on the bottom of a 9x13 dish; pour remaining sauce over tortillas and top with more cheese.
  5. Cover with foil and bake 20-30 minutes at 350°-375°.
