Pumpkin Pie Crunch

Ingredients:

  • 1 package yellow cake mix
  • 1 15-oz. can Libby's Pumpkin
  • 1 12-oz. can evaporated milk
  • 3 large eggs
  • 1 1/2 cups sugar
  • 4 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup chopped pecans (optional)
  • 1 cup butter, melted

Directions:

  1. Pre-heat oven to 350°. Grease 9x13 pan.
  2. Combine first 7 ingredients. Blend well.
  3. Pour into pan.
  4. Sprinkle dry cake mix on top with nuts.
  5. Drizzle butter over all.
  6. Bake 50-55 minutes.
  7. Cool and cut into squares. Serve with whipped cream.
