Buttermilk Coffeecake

 

Ingredients:

Cake

  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup buttermilk
  • 2 cups flour (1/2 whole grain)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Topping

  • 1 cup chopped nuts (optional)
  • 1 cup sugar
  • 1/2 cup butter
  • 1 tsp cinnamon
  • 1/2 cup brown sugar

Directions:

  1. Cream sugar, butter, eggs, and vanilla until well blended.
  2. Combine flour, baking powder, baking soda, and salt.
  3. Add buttermilk and flour mixture alternating to sugar mixture, beating well after each addition.
  4. For Topping: Combine nuts, sugar, brown sugar, and cinnamon - cut in butter
  5. Put half the topping mixture on bottom, half on top
  6. Bake in greased 9x13 pan at 350° for 25-30 minutes
