Zucchini Bread

Ingredients:

Egg Mixture

  • 3 eggs, slighty beaten
  • 2 cups sugar
  • 1 cup oil
  • 2 cups zucchini, grated
  • 1 teaspoon vanilla

Dry Ingredients

  • 3 cups sifted flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon baking powder

Directions:

  1. Combine and beat egg mixture together
  2. Sift dry ingredients together
  3. Add dry ingredients to egg mixture and stir well.
  4. Add, if desired 1/2 chopped nuts
  5. Pour into 2 well-greased 4 1/2" x 8 1/2" loaf pans.
  6. Bake 1 hour at 325°

Servings: Yields 2 loaves
