Four Cheese Stuffed Shells (Spinach)

 

Ingredients:

  • 9 jumbo pasta shells, cooked and drained
  • 2 oz. fresh spinach, chopped and wilted in 1 T. olive oil
  • 1/2 c. ricotta cheese
  • 1/2 c. provolone cheese, shredded
  • 2 T. Parmesan cheese, grated
  • 1 egg
  • 1/2 T. dried parsley
  • 1/2 t. dried basil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1 c. meatless spaghetti sauce
  • 1 c. mozzarella cheese, shredded

Note: This recipe may be doubled and placed into a 9" x 13" pan.

Directions:

  1. Combine ricotta cheese, provolone cheese, Parmesan cheese, egg, parsley, basil, garlic, salt and pepper in medium bowl; stir until well mixed.
  2. Stir in cooked spinach.
  3. Spread 1/4 c. spaghetti sauce on bottom of baking dish.
  4. Fill shells with ricotta mixture; place in 8" x 8" dish.
  5. Spread remaining spaghetti sauce over shells.
  6. Sprinkle mozzarella cheese over stuffed shells.
  7. Bake at 350º for 20-30 minutes.
