Ingredients:
- 9 jumbo pasta shells, cooked and drained
- 2 oz. fresh spinach, chopped and wilted in 1 T. olive oil
- 1/2 c. ricotta cheese
- 1/2 c. provolone cheese, shredded
- 2 T. Parmesan cheese, grated
- 1 egg
- 1/2 T. dried parsley
- 1/2 t. dried basil
- 1 garlic clove, minced
- Salt and pepper to taste
- 1 c. meatless spaghetti sauce
- 1 c. mozzarella cheese, shredded
Note: This recipe may be doubled and placed into a 9" x 13" pan.
