Butter Cookies (Breanna's)

Ingredients:

  • 1 c. unsalted butter, softened
  • 2/3 c. sugar
  • 1 t. vanilla extract
  • 1/2 t. salt
  • 1 t. lemon zest (optional)
  • 1 egg, at room temp
  • 2 t. milk
  • 2 1/4 c. all purpose flour

Directions:

  1. Cream together butter and sugar.
  2. Beat in vanilla, salt, lemon zest, egg and milk.
  3. Add flour gradually until just incorporated.
  4. Divide the dough into thirds and shape each portion into a log of 1 1/2 inch diameter.
  5. Wrap the logs in plastic wrap and chill about 2 hours. (They can be frozen for up to 2 months.)
  6. Unwrap logs and slice cookies about 1/4 inch thick.
  7. Preheat oven to 350º. Bake about 10 minutes or until golden.
