Pumpkin Pie (Libby's Deep Dish)

This recipe is adapted from Libby's Kitchen


  • 9 inch unbaked deep dish pie shell
  • 3/4 c. sugar
  • 1/2 t. salt
  • 1 t. ground cinnamon
  • 1/2 t. ground ginger
  • 2 lg. eggs
  • 1 can (15 oz.) pumpkin
  • 1 can (12 fl. oz.) evaporated milk


  1. Make pie crust and put into a deep dish 9 inch pie tin.
  2. Mix sugar, salt, cinnamon, ginger and cloves in small bowl.
  3. Beat eggs in large bowl.
  4. Stir in pumpkin and sugar-spice mixture.
  5. GRADUALLY stir in evaporated milk.
  6. Pour into pie shell.
  7. Bake in preheated 425º oven for 15 minutes.
  8. Reduce temperature to 350º; bake 40-50 minutes or until knife inserted in center comes clean.

Note: *If using regular pie shell, extra filling can be cooked in a ramekin.

Servings: One deep dish 9 inch pie.
