Green Chile Chicken Sandwiches (Grilled)

 

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/3 c. soy sauce
  • 2 T. apple cider vinegar
  • 1 T. sugar
  • 1 t. oil
  • Frozen or canned diced green chiles
  • Monterey Jack cheese, sliced
  • 4-6 buns

Directions:

  1. Cut each chicken breast in 2-3 pieces and pound to flatten.
  2. In large Ziploc bag, combine soy sauce, vinegar, sugar and oil.
  3. Place chicken in bag and marinate for at least 30 minutes.
  4. Preheat grill on High for 5 minutes
  5. Drain marinade.
  6. Turn grill down to Medium and grill chicken for 6-7 minutes.
  7. Turn chicken and grill 3 minutes longer.
  8. Top chicken with green chile and Monterey Jack cheese and grill 2 minutes longer.

Servings: Makes 4-6 sandwiches.
