Raspberry Oatmeal Bar Cookies

Ingredients:

  • 2 1/2 c. flour or 3 c. Einkorn flour
  • 2 1/2 c. quick oats
  • 1 c. sugar or 3/4 c. maple SUGAR
  • 1 t. baking powder
  • 1/4 t. salt
  • 1 1/2 c. butter, melted
  • 4 t. vanilla
  • 3/4 c. (10 oz jar) raspberry jam
  • 1 c. sweetened flaked coconut or 3/4 c. unsweetened flaked coconut

Directions:

  1. Combine flour, oats, sugar, baking powder and salt in a bowl.
  2. Add butter and vanilla; mix until crumbly.
  3. Set aside 2 cups.
  4. Press remaining crumb mixture evenly into an ungreased cookie sheet.
  5. Spread preserves over crust.
  6. Combine coconut and reserved crumb mixture; sprinkle over preserves.
  7. In a pre-heated 350º oven, bake for 25-30 minutes or until coconut is lightly browned.
  8. Cool slightly before cutting into squares.
  9. Cool throuroughly before serving to reduce crumbling.

Servings: Makes 1 cookie sheet (1/2 recipe fits 9 x 13 inch pan)
