Firecracker Casserole

Ingredients:

  • 1 to 1 1/2 lbs. ground beef
  • 2 T. dehydrated onions
  • 1 can black beans, drained
  • 1 1/2 T. chili powder
  • 1 t. cumin
  • 4 large flour tortillas
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1 can green chiles
  • 1 to 2 c. shredded cheddar cheese

Directions:

  1. Cook beef and onion. Drain.
  2. Add beans, chili powder, and cumin.
  3. In separate bowl, combine soup, tomatoes and chiles.
  4. Layer twice in 9 x 13" baking dish: 2 tortillas, beef, soup, and shredded cheese.
  5. Bake at 350º for 25 to 30 minutes.

Servings: Serves 6.
