Tortellini Soup

Ingredients:
1 lb. Italian sausage
2 T. olive oil
½-1 yellow onion, chopped
3 cloves garlic, minced
6 c. beef broth
1-2 red bell peppers, chopped
1 15 oz. can diced tomatoes, with juice
1 8 oz. can tomato sauce
1 t. dried oregano
1 t. dried thyme
1 pkg. tortellini
2-3 medium zucchini or crookneck, sliced
Directions:
Brown sausage and drain.
Add olive oil to sausage and sauté onions and garlic.
Add broth, bell peppers, tomatoes, tomato sauce and seasonings.
Bring to a boil; reduce to a simmer.
Add zucchini and tortellini and simmer covered for another 25 minutes or until tortellini is done.
