Banana Bread (Whole Wheat)

Ingredients:

  • 2 c. sugar
  • 4 eggs
  • 1 c. extra Virgin olive oil
  • 6 med. overripe bananas, mashed
  • 2 t. pure vanilla extract
  • 2 1/2 c. whole wheat flour
  • 2 t. baking soda
  • 1 t. cinnamon
  • Dash of salt
  • 1 1/2 c. chopped pecans (optional)

Directions:

  1. Grease loaf pans.
  2. Preheat oven to 350-degrees.
  3. In mixer, combine sugar, eggs and oil.
  4. Mix at medium speed until light colored and creamy.
  5. Add bananas and vanilla and beat until smooth.
  6. Slowly add dry ingredients until thoroughly blended.
  7. Fold in nuts.
  8. Pour batter into greased pans and bake in middle of oven for 50-60 minutes.
  9. Let loaves cool 10 min. before turning onto rack.

Servings: Makes 2 large or 6 small loaves.
