Spinach Salad

Ingredients:

  • 1 lb. baby spinach
  • 3-4 eggs, hardboiled and chopped
  • 1 pkg. bacon, cooked and crumbled

Dressing

  • 1/2 c. sugar or 1/4 c. maple syrup
  • 1/3 c. cider vinegar
  • 1/2 c. oil
  • 1/2 red onion finely chopped
  • 1/4 c. ketchup

Directions:

  1. Put all salad ingredients in a large bowl.
  2. In a separate container with a lid, add all of the dressing ingredients and shake well.
  3. Pour dressing over salad and serve.

Servings: Serves 8-10.
