Chicken Curry
From Grandma's Kitchen
Ingredients:
- 1/4 c. onion, chopped
- 1/4 c. celery, chopped
- 1/4 c. butter
- 1/2 t. salt
- 1 T. curry powder
- 1/4 c. flour
- 1 c. milk OR plain yougurt
- 1 1/2 c. chicken broth
- 3 c. chicken, cooked and cut into bite-sized pieces
- Hot rice
Condiments
- chopped bell peppers
- chopped nuts
- pineapple chunks
- shredded coconut
- chopped tomatoes
Directions:
- Sauté onions and celery in butter for several minutes.
- Mix in salt and curry powder.
- Add flour; cook until bubbly.
- Pour in milk and chicken broth; cook on low heat, stirring until smooth and thick.
- Remove from heat and serve over hot rice and top with condiments.
Servings: Serves 6-8.
