Chicken Curry

Ingredients:

  • 1/4 c. onion, chopped
  • 1/4 c. celery, chopped
  • 1/4 c. butter
  • 1/2 t. salt
  • 1 T. curry powder
  • 1/4 c. flour
  • 1 c. milk OR plain yougurt
  • 1 1/2 c. chicken broth
  • 3 c. chicken, cooked and cut into bite-sized pieces
  • Hot rice

Condiments

  • chopped bell peppers
  • chopped nuts
  • pineapple chunks
  • shredded coconut
  • chopped tomatoes

Directions:

  1. Sauté onions and celery in butter for several minutes.
  2. Mix in salt and curry powder.
  3. Add flour; cook until bubbly.
  4. Pour in milk and chicken broth; cook on low heat, stirring until smooth and thick.
  5. Remove from heat and serve over hot rice and top with condiments.

Servings: Serves 6-8.
