Ingredients:
- 1/2 c. butter, softened
- 1/2 c. oil
- 1 3/4 c. sugar
- 2 eggs
- 1 t. vanilla extract
- 1/2 c. buttermilk (or 1/2 c. milk + 1/2 T. vinegar)
- 2 1/4 c. flour
- 1/2 c. cocoa powder
- 1 t. baking soda
- 1/2 t. salt
- 2 c. grated unpeeled zucchini
- 1 c. semisweet chocolate chips
- 3/4 c. chopped walnuts (opt.)
Directions:
- Preheat oven to 325°.
- Butter and flour 9x13-inch baking pan.
- In large bowl, stir together butter, oil and sugar.
- Add eggs, vanilla and buttermilk; mix.
- Add flour, cocoa, baking soda and salt; mix.
- Mix in grated zucchini.
- Pour into prepared pan.
- Sprinkle chocolate chips and nuts over batter.
- Bake cake for about 50 minutes; cool cake completely in pan.
