Chocolate Zucchini Cake

 

Ingredients:

  • 1/2 c. butter, softened
  • 1/2 c. oil
  • 1 3/4 c. sugar
  • 2 eggs
  • 1 t. vanilla extract
  • 1/2 c. buttermilk (or 1/2 c. milk + 1/2 T. vinegar)
  • 2 1/4 c. flour
  • 1/2 c. cocoa powder
  • 1 t. baking soda
  • 1/2 t. salt
  • 2 c. grated unpeeled zucchini
  • 1 c. semisweet chocolate chips
  • 3/4 c. chopped walnuts (opt.)

Directions:

  1. Preheat oven to 325°.
  2. Butter and flour 9x13-inch baking pan.
  3. In large bowl, stir together butter, oil and sugar.
  4. Add eggs, vanilla and buttermilk; mix.
  5. Add flour, cocoa, baking soda and salt; mix.
  6. Mix in grated zucchini.
  7. Pour into prepared pan.
  8. Sprinkle chocolate chips and nuts over batter.
  9. Bake cake for about 50 minutes; cool cake completely in pan.
