Cinnamon Rolls (1/2 Whole Wheat)

 

Ingredients:

  • 1 1/4 c. milk, scalded and cooled to 100° F
  • 1 T. yeast
  • 2 t. salt
  • 1/2 c. sugar
  • 2 eggs
  • 12 T. butter, softened
  • 2 1/2 c. wheat flour
  • 2 1/2 c. bread flour
  • Softened butter
  • Sugar
  • Cinnamon

Frosting

  • 2 c. powdered sugar
  • 3 T. butter
  • 2-3 T. milk
  • 1 t. vanilla

Directions:

  1. Combine the first four ingredients in mixer. Let yeast dissolve and bubble.
  2. Add eggs and butter and (with dough hook) mix thoroughly at medium speed.
  3. Add flours, 1/2 cup at a time; beat until smooth.
  4. Cover and let rise in a warm place (2-3 hours).
  5. Punch down and divide dough into 2 pieces. Roll out each piece into a 9x13 inch rectangle, spread with softened butter, and sprinkle with sugar and cinnamon.
  6. Roll the long side up and press the edge into the dough. Cut into 12 pieces. Place on a greased pan and press each piece down. Cover and let rise until doubled (30 min - 1 hr).
  7. Bake in preheated 350º oven for 18-20 minutes or until golden brown.
  8. Top with frosting immediately after removing from oven.

Frosting

  1. Combine powdered sugar and butter.
  2. Add milk and vanilla to desired consistency.

Servings: Makes 24 rolls.
