Ingredients:
- 1 pound lean ground beef
- 1 c. diced onion or 1/2 c. dehydrated onions
- 1 (14 oz.) cans mild or medium red enchilada sauce
- 1 t. garlic powder
- 1 can pinto beans, drained
- 4 cooked Navajo Fry Breads
- 1 head iceberg lettuce, shredded
- 3 tomatoes, diced
- 2 c. sharp Cheddar cheese, shredded
- Sour cream (optional)
Directions:
- In a large frying pan over medium-high heat, brown ground meat and onions until cooked; add garlic powder, enchilada sauce and beans. Simmer.
- Place Fry Bread, cupped side up, on separate plates.
- Layer ground meat mixture, lettuce, tomatoes, and cheddar cheese, on top of each Fry Bread.
- Top with sour cream, if desired, and serve open-faced with a fork.
