  • 1 pound lean ground beef
  • 1 c. diced onion or 1/2 c. dehydrated onions
  • 1 (14 oz.) cans mild or medium red enchilada sauce
  • 1 t. garlic powder
  • 1 can pinto beans, drained
  • 4 cooked Navajo Fry Breads
  • 1 head iceberg lettuce, shredded
  • 3 tomatoes, diced
  • 2 c. sharp Cheddar cheese, shredded
  • Sour cream (optional)


  1. In a large frying pan over medium-high heat, brown ground meat and onions until cooked; add garlic powder, enchilada sauce and beans. Simmer.
  2. Place Fry Bread, cupped side up, on separate plates.
  3. Layer ground meat mixture, lettuce, tomatoes, and cheddar cheese, on top of each Fry Bread.
  4. Top with sour cream, if desired, and serve open-faced with a fork.

Servings: Makes 4.
