Gingerbread Muffins

 

Ingredients:

  • 1 1/4 cups whole wheat flour
  • 1/4 tsp. salt
  • 3/4 tsp. soda
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/8 tsp. nutmeg
  • 1 T. sugar
  • 1/3 cup chopped nuts
  • 1 egg
  • 1/4 cup oil
  • 1/3 cup light molasses
  • 1/2 cup buttermilk (1/2 cup milk + 1/2 T. vinegar or lemon juice)

Directions:

  1. Mix dry ingredients in one bowl.
  2. Combine egg, oil, molasses and buttermilk in another bowl.
  3. Pour wet mix into dry ingredients, and stir only until just combined.
  4. Fill muffin cups 2/3 full.
  5. Bake at 400 degrees for 12-14 minutes or 8-10 minutes for miniature muffins.

Servings: Makes 12 regular or 36 small muffins.
