Multi-Grain Muffins

 

Ingredients:

  • 1 c. whole wheat flour
  • 1/2 c. oats
  • 1/4 c. barley flakes
  • 1/4 c. rye or wheat flakes
  • 1/4 c. brown sugar
  • 1/2 c. olive oil
  • 1 egg
  • 1 c. buttermilk (or 1 c. milk + 1 T. vinegar or lemon juice)
  • 1 t. baking powder
  • 1/2 t. baking soda
  • Dash of salt
  • 1/4 c. chopped pecans

Directions:

  1. Mix all ingredients together until just moistened.
  2. Bake in greased or paper lined muffin tins for 20 minutes at 350º.

Servings: Makes 12 muffins.
