Directions:
- Mix first four ingredients.
- Mix dry ingredients with whisk, then add to the first four ingredients alternating with the water (start and end with the flour mixture).
- Stir in vanilla.
- Spoon into loaf pan or muffins.
- If making a loaf, bake at 325° for 1 hour, 10 minutes. If making muffins, bake at 325° for 20 minutes.
Servings: Makes about 12 large or 36 mini muffins.
