Pumpkin Chocolate Chip Muffins

 

Ingredients:

  • 2 cups sugar
  • 3/4 cup oil
  • 4 eggs
  • 1 can (15 oz.) pumpkin purée
  • 3 1/3 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2/3 cup water
  • 2 teaspoons vanilla
  • 1 bag (12 oz.) chocolate chips

Directions:

  1. Mix first four ingredients.
  2. Mix dry ingredients with whisk, then add to the first four ingredients alternating with the water (start and end with the flour mixture).
  3. Stir in vanilla.
  4. Spoon into loaf pan or muffins.
  5. If making a loaf, bake at 325° for 1 hour, 10 minutes. If making muffins, bake at 325° for 20 minutes.

Servings: Makes about 12 large or 36 mini muffins.
